I’ve always liked veggies and fruits. Thanks to my mom, is wasn’t forced on us, but was just presented to us in an appetizing way. Luckily I liked my mom’s cooking so eating her food was easy.
As I grew up, my palette changed and I became a big fan of some green veggies that were not served during my childhood. Things like asparagus, kale and even Brussels sprouts are now some of my favorite foods.
I’ve recently become a big fan of kale and I think you will too. Here is a delicious recipe I made for lunch the other day.
Pasta with Kale and Edamame:
4 cloves garlic
2 tablespoons agave
2 tablespoons rice vinegar
2 tablespoons low sodium soy sauce
2 tablespoons sesame oil
1 teaspoon Sriracha
Cooked whole wheat pasta
Cooked edamame
Kale
Mix dressing, pour over salad and enjoy!
