I hate throwing away food, especially fresh fruits and vegetables. Last week one of my meal panning recipes called for spinach. However I didn’t use nearly as much as I thought I would.
Both Sarah and I love smoothies! So after searching for smoothie recipes with spinach, I came up with this Green Monster Spinach Smoothie by iowagirleats.com I adapted it a bit as I didn’t want to drink as much milk as it called for.
Both Sarah and I absolutely loved it!!! The best part was you couldn’t taste the spinach flavor! It all blended so well and was a real delight to drink. Sarah even asked me for seconds! So I made another batch, poured some in her cup and froze the rest in our ice pop holder.
Green Breakfast Smoothie
1 frozen sliced banana (peel and slice before freezing)
1 Tbsp peanut butter
1/2 cup vanilla yogurt
1/2 cup milk
1/2 cup water
2 big handfuls of spinach
Place items as listed and blend until combined.
We use our juicer everyday!!!!
