I made this dish the other night and just new I had to blog about it.

Spaghetti with Chickpeas

Ingredients
- 1 lb spaghetti
- 2 cloves garlic, minced
- 28 oz can crushed tomatoes
- 30 oz chickpeas, drained
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp pepper
- Grated Parmesan
Instructions
- Cook pasta according to package directions.
- Drain, reserving 1/2 cup of the cooking water.
- In a large pot heat 1/2 cup olive oil and garlic. Cook 1 to 2 minutes.
- Stir in tomatoes, chickpeas and the reserved pasta water.
- Bring to a boil, then reduce heat and simmer until the mixture thickens (about 10 minutes).
- Add lemon juice, salt and pepper. Mix well.
- Add the cooked pasta, toss to coat.
- Serve pasta with grated Parmesan.
